New to Automation. Need an AI or some form of automation to document text on screen along with timestamps. Even better if I can train it to spot and document law violations.

Hey everyone. I'm trying to learn this whole automation dealio, I'm brand spankin' new to it, though I'm somewhat experienced in basic level IT. I need to learn programming as well.
Anyway, for my first project, I'd like to have an AI or some form of automation to scan videos and output an excel or Google sheet all sorts of info about it. Like what timestamp it detects text on screen, what type of information it is so it goes into the right column, etc. Anyone have any suggestions as to where to start?
