Half way Potty trained

My little one is potty trained but still wants a diaper when she has a bowel movement. She’s really constipated and refuses to sit on the toilet when she needs to go. She’s been drinking more water but won’t eat fruits or veggies so she’s not getting enough fiber in her diet. I have tried sneaking veggies in her foods but as soon as she notices her food looks different she refuses to eat anything. Any suggestions?
