I am one of those "digital nomads" in Europe and needed an au pair who was flexible for travel. There were too many choices, applications. At some point, they all looked the same, and I was very hesitant to make a commitment. In the end, I decided to offer a 1-2 test period to several candidates. (eventually a male au pair). The extra travel/trips created an additional expense, but it was so worth it. There is only so much you can tell over video calls. My advice is to ask for it before you commit. Will definitely do it next time.
