Can I just my cat off urinary food?

Dsh, 10yrs old

My oldest cat got a urinary blockage about 5yrs ago. He was cleared and I started him on Iams urinary. He has always been a bit bony though and I want to fatten him up. I got a senior cat food that has more fat in it but I'm worried.

Is it wise to take him off this food? My roommate feeds her cats dry food soaked in water, kinda like a soup. Her cats are nearly as old and never had crystals. Could I start to do this with him? He's never been a fan of wet food if you can believe it but he's usually faithful to dry. I just don't want him to get a crystal again, I feel like that vet visit was too stressful for him.
