I'm sick of my menu day to day!
What make-at-home meals do you eat for your tea/dinner? Give me your best recipe! Doesn't have to be easy but not super expensive would be great.
Mine:
Stuffed Sweet Potato
Do a sweet potato as if you're making a normal baked potato. Touch of oil on the outside before you bake it. Make up some couscous. Sometimes I use one of those Ainsely Harriet packets or I do it myself and add red onion, red pepper, spinach, whatever's in the fridge and needs using up.
Finely chopped onions in a pot, add mince, turmeric, chilli powder, chopped tomatoes.
Scoop out inside of sweet potato, mix in with couscous. Restuff sweet potato with couscous and mince. Sprinkle feta cheese on top. Yum yum!
Hit me with your best!
Edit: and cumin! Add cumin to the mince as well!
