[Wandavision] Why couldn't Wanda keep the hex over just that house to keep Vision and the boys alive? Why did she need the hex and to bewitch other people just to keep the family extant?

Indirectly. She always had her base power, the undeveloped potential of a natural born witch. What the Mind Stone did was unlock her full potential and more, the Scarlet Witch was a creation of the Mind Stone using the raw material present. There's suggestions as well that her brother was never truly empowered by the Mind Stone, he would have otherwise died like the other test subjects so it seems plausible that his abilities were actually the result of Wanda subconsciously changing the parameters of his empowerment and the unusual ability of speed he gained was a byproduct of Wanda wanting to give him a way to run away from being hurt. The scientists simply assumed it was just the Mind Stone that did it but the truth was that it was Wanda who influenced the process so he would not only survive it but gain the means to protect himself. Monica's own empowerment being an accidental example of how this could occur.
