[RPG classes] how does the HERO class actually works? And why do they still need a party when they alone are stronger than the demon lord?

They're supposed to be the strongest who will soon catch up and surpassed the strength of a demon lord

They're pretty much capable of anything, from being a warrior, a tank, a healer and a mage, all 4 in 1, basically the most essential classes

So why the need for a party when they can solo the demon lord?

And how are they actually different other than mashing up the most important classes?

Also, what usually happens (like the most likely event) after end of the journey? The demon army, the kingdom, and the party?

why do they still need a party?

Think about it like someone who builds a company from scratch and actually succeeds at it.

They gotta know how to lead. They gotta know how to make the product. They gotta know how to account. They gotta know how to understand the market. That makes them the most competent overall in their nascent company but not the most competent at any one thing, and if they don't listen to the people they otherwise bring in they're going to have an awful time and likely fail.
