[Avatar] What are "humans" in the grander scheme of things?

So in Legend of Korra, when we find out about the first Avatar, there's a few human groups living separately. They live on the Lion Turtles, away from the Spirit world.
So why are humans distinct from spriits in the first place? Where did they come from? What about normal animals like lemur-dogs and bear-panthers and what-not. Do we have anything that might give us insight on this, or is it all down to speculation?
