I mean, who would want to carry some kind of fuel (as other ships presumably do, like the X-wing) to power one's ship, if you could extract power from light in a renewable way?
If the efficiency or the speed of TIE fighters was lower I could understand it. But apparently, TIE fighters were faster than X-wings. So, why would the rebels have slower ships that can exhaust their fuel reserves in mid-flight, if they could avoid this problem simply by adding some solar panels to their ships? It seems dumb...
PS: I've read from many fans that the panels in TIE fighters are actually radiators to dissipate heat, but apparently is canon that they are solar panels, so let's stick to that...
