Why aren't there pre-made dishes made with lactose free cheese? Or restaurants that use lactose free cheese? One pizza place near my house uses soy, and I can find products that use soy as an alternative. But why not use the lactose free kind?

There are plenty lactose free cheeses that taste the same as regular cheese, and come in a variety of flavours. If there does happen to be any products made with lactose free cheese, please let me know. My love for cheese overrides any possible cost I may need to dish out to buy one. Soy just doesn't taste as good and also makes my stomach cry for mercy.
I suddenly became severely lactose intolerant a few years ago and that cut out just about every meal I ate until I discovered recently my local grocery stores started carrying cheese I can actually have that doesn't make my ass want to explode.
