Does changing the ASA/ISO on a film camera do anything in-camera?

I know that changing the iso helps the light meter work properly but other than that does it do anything? My light meter doesn’t work and I have a roll of expired ISO 800 film from 2005 and I wondering if I told the film lab to push it one stop would it come out alright or would it mess up since I’ve kept the iso setting at 800 instead of 1060 which is the next stop on my camera?
