What should my first "real" camera be?

My phone camera is pretty good. When I spring for a mirrorless or DSLR, I wanna be sure I'm getting an appreciable increase in capability. Will the Canon Rebel T7 or Nikon equivalent give me that? Or should I be setting my sights a little higher? I know it's mostly down to skill, but what camera would you reccomend to get me into real, proper photography?
