Would Romans have known about language shift, such as Old Latin->Classical Latin?

In 1977, an Old Latin inscription was found in the ancient city of Satricum that included the (supposed) name of a well known Roman, Publius Valerius Poplicola, in its Old Latin form, Poplios Valesios. Would Romans have known that this was the real way it was spelled then, or would they have not recognized the form of this name? In addition, would they have known about the differences between Old and Classical Latin? Here is the inscription on Wikipedia.
