Why did lambs stop becoming prominent in church decoration in Italy?

Many older churches in Italy have lambs featured prominently, such as Santa Maria in Trastevere and Sant Appolinaire in Classe.

Renaissance churches onward seem to have done away with lambs in their decoration, was this because of an increased fascination with the human body in art and a shifting to statues of human form as decorations or was there a theological change that happened along the way that made lambs fall out of style?
