Where did the source of wealth for European nobles come from? What was the medium of their wealth?

I know they were primarily land owners and a significant portion of their wealth came from taxes but is that it?

Also, when serfs paid their taxes, did they pay in precious metals? I always assumed they did it through services or goods. Farmers paid in grain, blacksmiths did free work, etc. If so, did they have a couple tons of grain simply rotting away or being pecked at by rats in their pantries for a year in case of siege?
