This article about the rise of fast-casual restaurants like Chipotle, Shake Shack, and Panera suggests that the previous generation of fast food simply did not care about taste.
The argument being made here is that previously most Americans didn't have the income level to demand anything more than cheap fast food. The rise in income levels and young professionals created the more high end market we see today. But, was it always like this? Did Americans really only start caring about quality food in the last 20 or 30 years? Was it really the increase average incomes that started this trend, or is there more to it?
