Is it possible to become malnourished and have severe symptoms after only a week of not eating enough?

Some people spend that long feasting and are perfectly fine. I myself have gone a few weeks with not eating much more than snacks in the past and never experienced negative symptoms.

But now I spend one week without an appetite, having about one meal per day, and I start having these episodes of feeling weak and just plain horrible? I'm not even underweight.

I'm taking my meals a lot more seriously now, but I can't understand how it would make me sick so quickly. Is it possible that this is happening only because I haven't been eating much for one week?
