Unexplained shortness of breath/tightness in throat after every meal

This has been going on for the last week or so now and is causing increasing distress.

My doctor seems to think it's acid reflux or GERD. What's unusual is it happens only after I've eaten. When it first happened, initially, I panicked and called an ambulance fearing it was anaphylaxis but over the last few days I've noticed all food triggers it making allergies an impossible conclusion. Regardless, I've been looked over by paramedics and my doctor and my airways seem clear, no wheezing or rattling in my lungs, my SP02 levels are consistently 98 - 99% and my blood pressure is hunky dory.

This doesn't change the fact I keep having this horrific sensation every time I eat. Can anyone give me advice on this?

My doctor was at a loss and said try Proton Pump Inhibitors (Omeprazole) and Gaviscon after every meal and come back in a week.

Here's a picture of my throat right now - does this look right to you? My tonsils seem bumpy looking to me and what's that at the back of my throat?

Appreciate any help that can be offered. This is really affecting my quality of life.
