Keep getting strange symptoms for months after long hikes

Hi, I'm a 25m from the UK and fairly slim, non smoker and rare alcohol drinker. I've been on 2 (6-8 mile) hikes over the past 3 months, the first beginning of may and second beginning of july.

When I'd return I'd feel fine, if a little drained. By the night, or the next morning after both times I'd start getting strange symptoms. These included tingling/ numbness in my hands and feet, higher than normal heartrate, heavier breathing, anxiety, insomnia, brain fog, irritability, no attention span, mood shifts, feeling too weak to do any exercise, like i havent eaten enough even with my normal meal portions etc.

This lasted for months the first time and some of the symptoms went away, so i went on a second hike a few weeks ago, only for it all to return but feel worse than the first. I have to wait till the 5th august for an appointment with a dr so i thought I'd ask here. The last time i had bloods dome but i was fine for blood sugar, magneisum, b12, liver, calcium levels.

The only medication im currently in is lymerceline for acne problems. I do not eat dairy products and may not eat enough carbs if it means anything also. I had not been on any other hikes of that length before, but generally walked half to a whole mile per day for months before and did a short daily workout routine for months, nothing too intense though, mainly stretches.
