Considering a Karlby type desk; but a few concerns

Hey all, first time posting here. I am looking to build a butcherblock based desk like a hack ikea desk, but I have a few challenges determining the top. I have two paths with different worries:
- My less hassle option is the Karlby 72x42 which I like the look of... but I'm hearing some bad things about the middle sagging, and potential issues with the particleboard if the veneer ever scratches too much. Is this something to worry about and is it solveable?
- The other option is a Hampton Bay 72x39 solid wood, which shouldn't sag... but as it comes unfinished I am a bit daunted by the prospect. The most I've ever done with wood is a light sand and chalk paint, so experience maybe 0.01 out of 10 :).
To make it more of a clear question, am I overthinking the sag issue on the Karlby, or is it easy enough for a first timer to finish a solid wood option?
EDIT: Ironically the solid wood is cheaper.. but maybe the unfinished state is why...
