I recently made some lime flavoured cookies via two recipes online. The first one only used zest in the batter and tasted plain with a faint lime flavour, while the second one used lime juice as well as zest and had a stronger flavour.
I really like the texture of the first recipe better, and I was able to freeze the dough to bake the rest later, but the second recipe was to runny to stay in a mold and freeze.
So now I’m looking for ways to enhance the flavour of lime in the first recipe.
My inital though was to boil down some lime juice so the flavour is more concentrated with less liquid, but I’ve read that heat/boiling can dull the flavour and possibly make it bitter (but also store bought lime/lemon juice is made from concentrate so I’m conflicted on that one, but I’m also not really in a position where I can make multiple batches of cookies to test a recipe).
Any suggestions are very much appreciated!
You could try oils.
