Baking Madeline's

I have started to bake Madeline's. Using PreppyKitchen's recipe on standard Madeline's.

I started with the original recipe, and it turned out wonderfully.

This week I baked a variation, using my own best judgment and insight on baking. Swapped out vanilla extract flavor for orange extract, and the lemon zest for orange zest. I also dipped them in chocolate which I put in the pans.

But I wonder, how would I make a chocolate variation? since using cocoa powder would be sifted in through the dry ingredient process during prep, but how would I incorporate that into the recipe without changing the recipe? same as strawberry Madeline's, I would swap out the zest for freeze dried strawberries which has a very strong strawberry flavor, but what extract would I use?

Like I said, I am using PreppyKitchens recipe for Madeline's for fool proof Madeline's.
