I've found this interesting looking recipe for Coffee and Cardamom Chiffon Cakes, but I'm confused by the last step for topping.
"In a bowl or mug beat [2 tsp] instant coffee and sugar with the help of a fork or spoon till pale and fluffy."
Does this mean just put raw instant coffee in with sugar, or actually make a cup of coffee and then use two teaspoons of it with the sugar? I don't know how coffee powder and sugar would become fluffy. Also, I imagine the sound of trying to beat it with a fork would be awful. I can feel my brain itching. If it means make a cup and use some of the liquid, is there any reason to use instant and not espresso?
