I brought some cookies back from Japan, and want to make similar ones on my own. Having figured out it was a shortbread cookie, The cookies have a strong coffee flavor/smell and slight chocolate flavor, I assume from the cocoa butter in the ingredients list.
Having never done shortbread before, how would I go about adding cocoa butter to a recipe, as opposed to regular butter? I made a test batch with coffee grinds but could barely tell taste any coffee flavor in the cookies I made, how can I make the flavor stronger?
Any advice appreciated, I couldn't find any similar recipes on google so I'm just going at it trial and error.
