Sablé breton bubbly / uneven

I have made sablé bretons and both of them failed because the cookies started bubbling in the oven, causing a very uneven surface. Recipe I am using: - Butter (room temp) 137g - Fleur de sel 2g - Powdered sugar 45g - Cooked eggyolk 5g - Flour 125g - Potato stach 50g
- Mix in butter, salt and powdered sugar.
- Mix in cooked eggyolk.
- Mix in flour and potato starch until dough forms
- Put dough between 2 baking papers and roll out
- Rest in freezer till firm
- Cut out cookies and put on baking tray with silicone mat and bake at 150 C till golden
Anyone any idea what is going wrong? 😊
