Cooking temp/time wrong?

I made maple tahini sesame cookies and the recipe called for 8mins for 350°F. They looked raw so I let them cook for a bit longer and that made them too hard after cooling :/. Any suggestions on how to keep them soft-ish but still golden? Lower temp maybe? Thanks in advance!
