If you’ve seen the tasty 2 day cookie you’ll know it has toffee chunks and brown butter. I have an idea of how these went wrong but would appreciate knowing anyway. It may be several or all of these factors. My ideas:
-The toffee wasn’t done. I didn’t have a candy thermometer and just stirred it for about 10-15 minutes anyway. When it froze it didn’t get hard and crunchy but soft and chewy. I broke it into small pieces and put it in the dough anyway thinking it wouldn’t matter.
-The brown butter was added while it was too warm. I think I let it cool for around 15 minutes? It was warm to the touch. I’ve made brown butter before, and I swear I’ve let it cool for less time than 15 minutes.
-There was too much water in the brown butter. The recipe said to add 4 ice cubes to make up for the evaporated water. I added one, let it melt, and then added 3 more. The brown butter looked a bit watery so maybe I needed les ice cubes?
-The cookies weren’t sized right. I used an ice cream scoop and tried to make them consistent. Guess I didn’t?
-The oven wasn’t at 325 degrees. My oven is dumb and only lists numbers with 00 and 50 (300, 350, 400, etc) so it’s annoying to measure other numbers like 325 and 375 lmao. A big skill issue but it’s worth noting.
Any answers would be appreciated. I’m a bit bummed these flopped. I only made half of the cookies so far and don’t even want to make the rest. (Second picture is probably the best they’ll look). They taste good, but they could be better. I know I messed up somewhere and would love to make these again one I find out why.
