How to get smooth and thin chocolate layers when dipping cookies in chocolate?

I tried to follow this recipe, even added a bit more shortening at the end, and my chocolate still kept going on thick and not smoothing out. I tried all different temperatures, didn't over melt so it couldn't have burnt, I have no idea how people get it so thin and so smooth???
What am i doing wrong?
