Sable/shortbread cookies turned out too soft/crumbly

hi, i tried to make sable cookies that are supposed to be somewhat hard and crunchy but mine turned out super soft and crumbly. it was still good but the texture was not what i was hoping for. the recipe i followed:

  • flour: 225g
  • butter: 190g
  • sugar: 75g
  • cocoa powder 25g
  • 1 egg yolk

i tried to cut up butter as quickly as i could and add it straight out of the fridge while it was still cold, and refrigerated the dough for over 1hr before slicing them and baking them at 180 deg for 13 minutes. how can i get these cookies to turn out crunchy instead of soft and crumbly?

edit: maybe i got the term confused, but basically i want my butter cookies to turn out hard and buttery (with a bite) instead of soft/sandy and crumbly. i’m not sure how to achieve this texture… thanks for your help
