cookies soft after resting

okay so ive been making chewy cookies with several recipes now and all of them turned out soft after post-baked cooling.

its crispy and chewy when its right out of the oven, but after letting it cool overnight, i noticed the cookies have some cakey/airy texture to it

i do notice the cookies are very greasy so im curious if that affects the sogginess of the cookies

also, any tips on keeping the crispiness of the cookies longer? or should i switch to a room temperature butter, instead of melted butter?
