Is my oven the culprit for my awful cookies?

Every time I make the same cookie recipe, they never turn out how I want them to. I’ve tried chilling the dough, adding a yolk, weighing my ingredients, parchment, and silicone mats.

They are either: -Flat -Crispy on the bottom, RAW on top -Round and unflattened -Pale and not golden at all.

Help please. I feel so silly that I can’t get cookies right. There was only one time they were nice and I think it was just luck.

I have a Miele Masterchef oven. Usually bake at 180 celsius and I’ve tried 190 celsius as well.

Edit: Thought I’d add the recipe:

-1 cup butter -1 cup sugar -1 cup brown sugar -2 tsp vanilla -2 eggs -3 cups flour -1 teaspoon baking soda -Pinch of salt -1 cup choco chips
