How to take advantage of cold weather? What to bake?

Hi everyone! I know Spring is technically here (in the northern hemisphere), but it’s still cold where I live (snowed last night lol). I was wondering how best to take advantage of the cold for baking in terms of having a colder house (we keep our house at ~58-64F / 14-18C) and wanting to use the oven more to boost the house temp a little?

Pastries and cream-based items come to mind because they’re less likely to melt. But I was wondering what other things do well in colder temps? Chocolate work? Sugar work? Shortbread? It’s too cold for butter to even soften lol

Another thing that isn’t great in my house with these cold temperatures is bread. I have to stick my dough near the heater and double the proofing time, which is doable but not ideal.

((I’ll be asking the reverse in the summer bc we lack AC, and our temps hover at 72-78F (22-26C). So far, all I can think of is bread.))
