Thin, Crumbly Cookies

One of my friends really likes thin, crumbly cookies (not really crispy, but it kind of crumbles in your mouth?) with a gritty texture. Her favorite cookies from the bakery look like this from the inside, and I was wondering if anyone knew how to get that texture/thin crumbliness. Thanks!
