Bread Pudding for 300

So I am making a brioche bread pudding with a chocolate stout sauce. I've got my loaves going already. The serving size is "small" per person.
I'm a little apprehensive about the actual baking of the bread pudding. I've made bread pudding but just not on this scale. Any advice for something like this in bulk?
I'm thinking rather than using a sheet pan just using large heavy duty foil pans, and baking at a lower temp - I'm using a convection oven so I'm hoping it'll bake pretty evenly despite the size.
