Keeping royal icing pretty Sunday till Tuesday

I am looking for some help planning a silly treat. I am serving these Tuesday at 11. I am traveling with them all day Monday, so I want to have them finished by Sunday evening. They're green, blue and brown mini golf cookies (no black) and I'll be using americolor gel food coloring in the royal icing. I'm worried about being heartbroken with faded, matte, muted, or bleeding colors.

  • How can I best prevent those outcomes?
  • Should I refrigerate these cookies Sunday night? Freeze them? I've heard humidity is bad for them but I don't want them to be stale either.
  • What other tips for keeping sugar cookies (and icing) fresh do you have?
