Savory Croquembouche?

Post Body
Is it possible to make this tower dessert savory? I’ve never made one before, and am in a baking challenge where next week’s assignment is to bake a tower. I’m thinking of making Gougeres instead of the traditional cream puffs. My question is what could I use (if it’s even possible) in place of the caramel for attaching the Gougeres to each other?
