Are there recent research papers describing the current methods of archaeology?

I never really considered the methods of archaeology until I had to take a class about writing step-by-step reports of the field. Is there anything that describes how potential sites are found, how to get permission to excavate, why do we draw in addition to taking photos of the field, where do artifacts stay post-excavation, etc? If there are articles about Peru specifically that would be great but Iā€™m not sure where to begin researching :0
