I want to make Syrniki

I’m from the UK and wanted to make Syrniki… again.
I have made Syrniki before using Quark but my question is mainly about the use of Eggs.
I’ve seen recipes that use the whole egg and also recipes that use just the egg yolk.
What difference does using egg whites, or not, make?
If you have your own ‘secret’ recipe you’d like to share, I’d appreciate it.
