Can a motor seize on starting after sitting for a bit?

2012 Buick Verano 4 cylinder. I've had the car since new. For the last 5 years the car has burned pretty good amounts of oil. Its been getting worse and worse. Its fairly standard and its discussed on Buick forums. My current job is delivering for Amazon Flex. Last mile delivery stuff. Lots of stops. I topped the oil off Sunday evening. Worked 5 shifts this week and was coming the end of my last shift yesterday which was over 130 miles and stopped at a store that I was in for about an hour and half. I came out and the car would crank but not turn over. The store was close to home so I walked back and thought I'd let the car chill for a bit.

Came back about 2 hours later (cars been sitting now for about 3 hours) and before I tried again I checked the oil and it was dry which scared the hell out of me. Tried to start it again and no bueno. Got it towed but this is the weekend and shop won't open till Monday and they can't promise they won't get to it till that day so it might be Tuesday before I find out. Car was running a bit rough for the final 2 hours of the route but I was way the hell out on the east side of Cleveland suburbs with a 40 minute highway commute back so I decided to risk it. I usually have to put in about 2 quarts every 500 miles or so when I drive it as a delivery car so that's why I was surprised to see the stick so dry as it was completly full Sunday night.

P. S Can a car be run dry of oil and still restart?
