Travelling from the US to the UK Sept 18-Oct 7 (UK, IE, and US passports) with a possible jump to Dublin for a few days. My parents ~80, me 50, my brother ~54 yo. Travelling to North Norfolk, what should we do?

Travelling to Norfolk (Heacham - uncle owns a caravan there). Parents will be there for Sept-Oct. I will be there the dates above, and brother will overlap my dates. We have family in Downham Market. And we all used to live in Suffolk/Norfolk area about 35 years ago. Mum and I are UK passport holders, brother is working on his.

We've already figured out some much needed down time. We're looking at a day hire on a canal boat from Downham Market to Ely and and back on Matilda. Also planning a few days up in Herriot country (Yorkshire Dales). We're not looking to travel the country, just looking for suggestions for nice days out, or maybe even 2 day trips.

BONUS QUESTION: is there a good short term Phone Sim that would be good to get for mostly data service for that length of trip? I am also thinking of jumping over to Dublin for 2 days so extra bonus if it would include that.
