how much mac do I really need?

Looking to buy a macbook pro or mac mini. I have an ipad pro so a portable device isn't 100% necessary.

I plan to use adobe premiere pro occasionally for youtube uploads. I mainly want a device i can put my entire music library on (1 - 2 tb). I have a desk with a monitor for my work laptop so I'm thinking i'd use clamshell mode.

I don't need the latest and greatest, but would preferably like somethign that can handle my adobe creative cloud. What's the minimum configuration? Any recs on a budget for this sort of thing? I can do with an older model.
