Finally Have Insurance, Now What?

This is in no way me asking for medical advice, I am just looking for people's first hand experience to help me make my own decide on what to do.

It has been 6 or so years since I last saw a doctor outside of the Minute Clinic for random stuff and even then, I didn't understand the healthcare system.

I want to resume medication treatment for my anxiety/ADHD, but I also have allergies and sinus issues I want to get checked and I guess just a general check-up. I'm worried (haha, when am I not??) that if I go to a general doctor, they may not treat my anxiety like its a real issue, but then I don't want to go to a Psychiatrist and to another type of doctor, since it'll be hard enough for me to see one doctor let alone two!

Does anyone have any thoughts or opinions or stories to help me figure out the best plan? I've been back forward for days on what I should do. Maybe the obvious choice is to just go to a regular doctor and I'm just overthinking it??
