Paying high prices for vegetable-based products

It's always been funny to me that the processed vegan foods that are wholly vegetable, soy, pea, corn, or flour based are so much more expensive than their non-vegan counterparts. In my head I always figured that those derivatives are some of the cheapest in the world, hence why they tend to be the bases for almost all processed foods. I also find it pretty ironic how vegans create all of these vegan versions of the foods they miss, like cheese, hot dogs, chicken, beef, and milk. If someone has an actual reason for why the processed vegan foods cost more, I'd love to hear, because I honestly have yet to find one.
