Bing carburetor sanity check

Hi folks. I'm in the final phases of my 1983 R80 restoration and I had one successful startup yesterday before calling it quits. The plugs fouled badly and I was not able to get a restart. Stock airbox, but reverse cone shorty mufflers instead of stock silencers. If I'm getting the theory right, opening up the exhaust but not the airbox has made the mixture rich, hence the carbon fouling. I should back out the idle screw to lean out, or change jet size. Correct? If yes, what is the limit of screwing out that is effective on the adjustment screw? (I'm used to Japanese bikes and mikunis, and I've only had one cup of coffee today)
