I plan on quitting my job, but I'm afraid my boss may stifle some of the money she owes me

Long story short, I plan on quitting my job. This is because my boss changed my contract (From full time to part time and a less wage per hour) and I do not agree with it. I have not signed anything as of yet, however, I did verbally agreed to it.

Now, I plan on give her my two weeks tomorrow, however, paid day just happened yesterday, and because she fucked up the pay schedule she owes me an extra week of work, but I'm afraid she will want to give it at the lower rate (even though I just barely agreed to the lower wage today).

In reality, I don't think she'll want me to stay, so she may or may not agree with the two weeks notice, but even if she did, I assume that as long as I don't sign a contract that she cannot pay me using a lower rate. I don't know. That was a question to be honest.

For clarity, I do have a signed copy of my original contract as well as I live in Texas.
