What evidence actually exists in regard to Jewish and Christian usage of "oral tradition"?

Very often when analyzing texts, especially when debating the historicity of an event, people will appeal to oral traditions that predated the texts we have.

What actual evidence do we have that characterizes how ancient Jews and Christians actually used and maintained oral traditions? This question pertains primarily to the gospels and the Torah.
