1997 300ex cuts out in high gear/ heavy load

The bike was running perfect with a 38 pilot and 122 main. all of a sudden it spits and spudders under heavy load. I cleaned the carb and nothing, changed the carb and fuel and tank all in one go nothing changed. So I adjusted the Valve to spec nothing changed. Made a stand alone harness with a old 300ex wiring harness to bypass everything, with a good working Chinese cdi still happening. Good plug gap and a clean burn on the plug. Different ignition coil. Also made sure the intake boot wasn’t ripped. I am usually pretty good a diagnosis on these bikes but I’m at a complete loss.
