Here are the things Sokka has been through/seen up until this point
Getting spiritnapped by an angry panda bear and imprisoned in another dimension
Seeing his friend get possessed by the spirit of a 112 year old firebender that sunk an entire temple into lava
Watched his first girlfriend bring a fish back to life and transform into the moon
Watched his friend fuse with a different fish and wipe out an invading Fire Nation army
And yet some visions, tornadoes and weird noises were TOO MUCH for him to reckon with?
I think it's in Sokka's character to want to be in control of a situation, or at least understand the mechanisms for control. Maybe a core part of his character formed when his mother died and his father needed him to step up as a protector.
To clarify, Sokka doesn't need to know how bending works as he just dismisses it as magic, but if something magical happens without some sort of source/known cause making it happen then his brain turns on.
When Toph learns how to metalbend, he just accepts it as new knowledge about magic; when he sees a hallucination without there being some sort of mind bender in a bush somewhere, he gets skeptical and assumes something is wrong.
