What stats do YOU aim for before you start breeding for mutations?

My husband and I play on PC on a private server, PVE, a couple mods. We're doing our first big breeding projects, and it's definitely confusing, but addictively fun!

On my pteradons, I collected several higher level animals, and used them to breed out a group that has consistently produced 40 points in stamina, 44 in weight, and 37 in melee.

Oxygen and food are high 30's, speed only 8ish.

I was going to shoot for mutations when I only had a 40 in weight, but put it off when I found the 44. Now, I have what I thought was amazing, but I've found a new female 150 that has a 39 in melee.

Should I just keep 'starting over' to add these higher stats in, or just move forward and try for mutations?

Also, is there any way to tell what a mutation is in? My first stud with the 40/44/37 line has a mutation in one of his other three, but I don't know what exactly. I've killed off the older animals as I went, so I can't compare stats.
