I feel so overwhelmed having an exercise routine and I give up everytime

I worked out every night for like a whole year, even made sure to do it in the dead of the night. I didn't eat sugar at all for months.

Eventually it got too overwhelming and was taking over my life. It was too many tasks. Like if I was working out my biceps, I'd do like a few different exercises but each exercise would be a certain amount of numbers.

I stopped watching workout YouTube videos and decided I'd try do this my own way.

I'd play calming music and try and workout but counting the number of a certain exercise is so mentally exhausting and then of course I have to keep a routine of it or my muscles won't grow.

I just stopped because it was too overwhelming.

How do I make it fun/keep myself engaged? I'm going to try going to a gym but I mostly want to do it at home.
